What happened
Deli meats such as ham, turkey, and roast beef begin as cooked, preserved cuts ready for slicing. A ham starts as a pig’s back leg, bones removed and meat cut into large pieces. The meat is bathed in a brine—salt for flavor and preservation, sugar to balance taste, phosphates to retain moisture, and nitrites that give ham its pink color and inhibit botulism.
Tiny needles inject the brine, then the pieces are packed in a casing and cooked in a smokehouse, sometimes with real wood smoke or liquid smoke for flavor. After cooling, the ham is sliced either at the plant or at a grocery deli counter.
The same basic steps apply to other deli meats, with variations such as finely ground bologna or individually roasted turkey. While convenient and long‑lasting, deli meats contain significant sodium, saturated fat, and nitrite, prompting research into lower‑sodium and safer formulations.
